There is nothing like a good home cooked meal. You know exactly what you put into the food, you know what you do and don't like. I am not the best cook, but I hope to be as good as a cook as my mother. She can make anything without looking at a recipe, and she hardly ever burns food. I told her over Christmas break that she really needs to write down her recipes because I want to start cooking like her, and I just have to learn how to make her sugar cookies. Tonight started out with a good home cooked meal. I don't even know what to call it because I made it up. I will call it
Creamy Garlic Chicken
Ingredients
-3-4 boneless chicken breasts
-4-5 garlic cloves
-extra virgin olive oil
-2 small cans of cream of chicken soup
-1 whole onion
-seasonings that you like
-fresh chives
-salt and pepper
-Cream Cheese
-Sour cream
Instructions: Coat the bottom of a glass pan with extra virgin olive oil, cut onion into bite size pieces and add it to the pan along with the fresh chives. In the mean time in a separate bowl combine cream of chicken soup, a little bit of sour cream and cream cheese, and seasonings of your choice, blend all together til its all creamed together, and add half of the mixture into the glass pan. Next prepare thawed chicken by pocking some of the garlic into the chicken. put the chicken in glass pan and layer the rest of the creamy stuff, and add some more garlic on top of it, and add some salt and pepper. The more garlic the better. Cover with Tin Foil on 350 degrees for an hour. Let it cool for five minutes and I pulled the chicken apart and ate it will rice. Hopefully that makes since. Wain said it was in the top five of best things I have made.
